Description

Gorur gusso is spicy beef curry, a very important dish in the weeks following Eid-ul-Adha, or the Muslim Eid of ritual sacrifice. During this Eid, Muslims perform ritual slaughter in the name of Allah, and cows are often the preferred sacrificial animal across South and Southeast Asia.

From a food perspective, the importance of this Eid is best understood as a time when there is an abundance of meat for even the poorest members of society. Sharing meat widely, across all strata, is part of the religious duties of this Eid. Consequently, this beef curry is cooked by Rohingya families once or twice a week following Eid. It is eaten it with luri fira (rice flour flatbread) or plain rice and cooked mostly with potatoes, but can also be cooked with or without vegetables.
