Description

Elish mas is Hilsa fish, found in both fresh and salt water and is considered a huge delicacy. To cook this particular dish, the fish is salted and dried in the sun for three to five days before being wrapped in calabash leaf and cooked. Elish maas (Hilsa fish) is expensive in Arakan, so this dish is not one that can be enjoyed often, but the Rohingya like to eat it at least a few times a year.
